A champagne recipe for bluefish...drink the champagne

Just caught another bluefish? You think it tastes too fishy for a good meal? Wait! Don’t throw it back. There are many ways to remedy that. First of all, the fishy taste is in the dark meat. After you skin and fillet the fish, cut out all the dark meat. Rinse the fish in salt water and squeeze some lemon over it. Now get your frypan going and put in some butter. Put the filets in upside down for a quick cooking on top and then flip them over.  Now pour on some champagne, sprinkle on some Italian bread crumbs and seasonings and cover it so it poaches a bit. Drink the rest of the champagne while it cooks. As soon as it flakes, serve it with rice and maybe some diced tomato, or pour on a little of that McCormick Lemon Butter Dill.

If you are taking the fish home instead, filet it, removing all the dark meat right away, rinse in salt water and put into a ziplock bag, with the bag, not the fish, touching the ice. When you get home, cut off any meat that is not firm and prepare with the above directions. I don’t find they freeze as well as other fish, but if you do want to save them, you can try bluefish cakes. When we caught way more than we could eat, we ground them up with onions, celery, ground pepper, and mayo, and made them into fish cakes which we froze individually. The first time we did this in a hurry and put them together when we froze them. We ended up with a huge brick of fish cakes that took forever to defrost!

Still, if fishing is not your choice, let’s take a look at some of the places to go for food on the east side of the bay. At the Jamestown Town Dock you can tie up for free and go to Spinnaker’s Cafe right on the dock for some superb lunch and homemade ice cream. If you want to stretch your legs, you could walk up the hill a bit and grab a bite at Slice O’ Heaven. Homemade desserts and a boutique lunch menu for something different. If it is fine dining you want, tie up in the evening and walk up to Simpatico, 13 Narragansett Avenue. Magical outside seating and a good wine list, with a wide range of dinner offerings from tuna to duck to veal.  You might want to call ahead at 423-2000.

If you find yourself in the Tiverton area, a special place to eat is the Boat House Tavern. For four years in a row the Open Table voted it the Top Scenic View and I am sure you will agree. There is free dockage for diners and an extensive menu with native cod fish and chips, Paella, steak, lobster, etc. with a great choice of sides. It is a la carte.
